Everyday at lunch time, I pass Jon Walker our Traffic Director in the hallway going to the station microwave to heat up our lunch. Everyday I asked him ” What did you bring?” because it always smells so good. His wife is a great cook. He has shared numerous recipes with me and all have been awesome. Today Jon brought something called Sausage Potato Soup. OMG, it smelled divine and looked so good. So I asked for the recipe. I plan on making this tonight and thought I’d share it with you as well. With the cooler weather, I really love making soups and chili. It’s fast, it’s easy and most of the time, pretty inexpensive. Here’s the recipe if you’d like to try it. Sausage Potato Soup
1/2 lb. Jimmy Dean breakfast sausage
1 onion chopped
1 14.5 oz. can chicken broth
4 cups of frozen shredded hash-brown potatoes
2 cups water
1 can cream of celery soup
1 can of cream of chicken soup
2 cups of milk
Garnish: with cheese
Step 1: In a large stock pot cook the pork sausage until it is no longer pink.
Step 2: Add onions, chicken broth, water and frozen hash-browns to the pot. Cook on medium heat until it boils then put lid on and simmer for 20 minutes.
Step 3: After the potatoes are cooked then add the canned soups stir well and then slowly pour milk in and stir well. Simmer until bubbly.
