Sweet Potato Mixture Ingredients:
1-1lb can of Bruce’s Yams
1 Cup Sugar
1/2 Cup Evaporated Milk
1 tsp. Vanilla
Pinch of Salt
1/3 Cup butter
1/3 Cup Flour
1 Cup Brown Sugar
1 Cup Flaked Coconut
1 Cup Chopped Pecans
1/3 cup Butter (melted)
Using a mixer, combine all sweet potato mixture ingredients until smooth. Pour into 2 qt. casserole dish.
Mix all topping ingredients and spread over sweet potato mixture.
Bake at 350 degrees for 40 minutes.
Carol Anne’s Notes:
I usually double this recipe to take to work which is about 20 people.
If you do double it, I reccommend making the sweet potato mixture as written just go through it twice! It makes the mixture smoother doing it a half at a time!
You can use two cans of yams (2lbs) for just one batch if you desire a thicker mixture.
If it last a second day… it’s great leftover too!
