Now, let me offer a disclaimer right up front. There is NO written recipe for Mom’s Potato Salad. I watched her make it over and over and over as a kid, and I’ve made many attempts to make it as an adult. Sometimes I hit a home run, sometimes it’s just not as good as other times. But, if it all comes together, I think you’ll like it!
Here’s what you’ll need:
6-7 medium size red potatos peeled boiled and cubed
3 medium eggs hard boiled peeled and cubed
About a half of a good size red onion cut into small pieces
Several sweet pickles cut into small pieces. I’m not sure how many to tell you to do. When the pickles used to be really big a couple would do. Now the sweet pickles are small and it takes at least 5-6 to really make an impact.
Combine all of the ingredients into a mixing bowl.
Add about 2-3 heaping tablespoons of Miracle Whip. (Not mayonaise, and not some off-brand salad dressing, and NOT Miracle Whip LITE! Spend a little and get the good stuff!)
Whip the ingredients with the Miracle Whip.
Pour in a little sweet pickle juice and a 1/2 -1 cup of sugar. Start easy.
Mix all of the ingredients together.
Taste it. If it doesn’t taste good to you, it’s going to be the blend of Miracle Whip, sweet pickle juice and sugar. That’s the secret sauce, and it takes just the right blend to make it perfect!
